Recipes  - My Creations

Thai Chicken Pasta Salad
Cook 2 servings of spaghettini
Fry 2 chicken breasts
Prepare 2 plates with a generous bed of lettuce (romaine)
In a large bowl,
    2-4    grated Carrots
    1-3    chopped green onions (cut on diagonal about 1 cm long)
In a small bowl or pyrex measuring cup, combine the following
    2 T    fresh Ginger
    2 T    finely chopped Garlic
    2 T    finely chopped Shallot (ok to skip)
    1/2 c  Peanut Butter
    3 T    Soy Sauce
    3 T    Lime Juice
    1 T    Sesame Oil
    2 T    Rice Wine Vinegar
    1 T    Brown Sugar
    1/2 t   (or less) dried Chilies
    1/3 c   finely chopped fresh Cilantro
    1/3 c   finely chopped fresh Mint
Stir to a smooth dressing (a Braun hand mixer works great)
Once the pasta is cooked, drain and give a cooling rinse, add to large bowl.
Once the chicken is cooked, cut into 1 cm cubes, add to large bowl.
Pour on dressing and toss until coated, serve over lettuce.  Serves 2.

Greek Pasta Salad
Cook 2 cups of Spinach Rotini (spirals) Pasta
Steam 1/2 head of Cauliflower - cut in bite-size pieces
In a large bowl,
    1-2 Tomatoes - cut into wedges (or cherry tomatoes)
    1 Green Pepper - sliced
    1 Cucumber - peeled, slice lengthwise, remove seeds, cut into 1 cm slices
    1 medium Red Onion - thin slices
    7 oz Pitted, Black Olives, cut in half 
In a small bowl or pyrex measuring cup, combine the following
    1 clove     crushed Garlic
    1-2 T        Lemon juice
    1 T + 1 t   Olive Oil
    1 T           Red Wine Vinegar
    1/2 t         dried Oregano
    dash        Salt and Pepper
Cut 6 oz of Feta Cheese into 1 cm cubes
When Pasta is cooked, drain and rinse until cool, add to Large Bowl
When Cauliflower is tender (5 minutes), drain and rinse until cool, add to Large Bowl
Add dressing to Large bowl and toss, add Feta for the final toss. Serve 2.
